Have you ever baked with Coconut Flour? I started trying it out a few years ago but it is not the easiest gluten free flour to bake with. You can’t take a normal recipe and substitute the coconut flour for the flour, your recipe will not work. Recipes with coconut flour usually use a lot more eggs than most recipes and, so far, I can’t really get it to rise. But I am getting the hang of baking with it and have found some really yummy recipes. You don’t use a lot of coconut flour in each recipe which means it lasts pretty well.
One of our favourite things as a family is banana bread. The kids love it and it is super easy to make. Most recipes, even the gluten ones, just require you to throw everything together. I buy a couple of bags of bananas form Checkers in the afternoon when they are on sale, they are then nice and ripe and ready to use.
This recipe is my current favourite, it is sugar free which means you can eat an extra slice, guilt free. The OhMega Almond butter is my favourite nut butter to use for baking or just to indulge in once in a while. You can switch it out for peanut butter but if you are trying to stay sugar-free or at least cut down, watch out for peanut butters loaded with sugar.
Coconut flour doesn’t really rise so if you want high loaves, either double the recipe or use those little loaf tins that you get, you can full them up and get nice little loaves. I haven’t tried making this as a muffin recipe yet but I think they could also work as muffins.
Banana Bead With Coconut Flour
Ingredients
- 3 bananas
- 1 tsp vanilla essence
- 1/4 cup OhMega almond butter
- 2 eggs
- 1/2 cup Lemcke coconut flour
- 3/4 tsp bicarb
- 1/2 tsp cinnamon
Instructions
- 1. Mash the bananas up really well.2. Add all the other ingredients to the bananas. 3. Pour into a loaf tin.4. Bake at 180 C for 25 minutes

We love banana bread at home, especially the kids. I’m quite curious about coconut flour because I’ve never used it before. I know coconut is better than the regular white stuff we usually use.
