I am not sure really how they came to this name because there is no actual dough of any kind in these but they are delicious.
This is actually another Weigh-Less recipe, these are considered one fat each and they are great as a snack when I have to do the school run but am feeling a little peckish, they take that hunger away and tide me over until the next meal.
Cookie-dough frozen fudge

Ingredients
- 1 tin Chickpeas
- ½ cup Smooth Peanut Butter
- ½ cup Low Fat Milk
- 8 Soft Pitted Dates
- 1tsp Vanilla Essence
Instructions
- Drain and rinse the chickpeas.
- Place all the ingredients into a food processor and blend until smooth.
- Spoon the batter into silicone moulds and freeze for 4 hours.
- Serve frozen
Notes
I used lactose-free milk.
I bought a pack of those pitted dates, they are all squashed together so I couldn't really get 8, I just cut the package in half and used that.

Cat – I can’t eat normal fudge so this works for me 🙂 Also Cam found a milk tart fudge recipe that was a huge hit!
