Summer is here. Yeah, I know it is officially only Spring but we really do only have two seasons here – winter and summer. The sunny days means more time outside which means the slow cooker has been packed away and it is time now for braais and salads.

A mixed bean salad is very South African, right? I think we all have a 4 bean salad recipe that’s been shared a few times. This delicious crunchy mixed bean salad is super simple to make, you can literally throw it all together while your guests are walking in from the car!! It is that simple.

It is also great (affordable) salad to make for a lot of people, you can easily double the recipe for a big crowd and it will go down well if you have vegetarians attending your braai!

Ingredients
  

  • 1 x 400 g can Rhodes Quality Black Beans drained and rinsed
  • 1 x 400 g can Rhodes Quality Whole Kernel Corn drained and rinsed
  • 1 x orange pepper seeded and chopped
  • 1 x red pepper seeded and chopped
  • 1 x small red onion finely chopped
  • 65 ml ¼ cup flat leaf parsley, finely chopped
  • 1 x 410 g can Rhodes Quality Baked Beans
  • 10-15 ml 2-3 tsp fresh lemon juice
  • Salt and freshly cracked black pepper

Instructions
 

  • Place the Rhodes Quality Black Beans and the Rhodes Quality Whole Kernel Corn into a large bowl and toss to mix.
  • Add the peppers, onion and parsley and mix again.
  • Stir in the Rhodes Quality Baked Beans.
  • Season to taste with the lemon juice and salt and pepper.
  • Chill until serving.
