Gherkin Cheese Balls

You can open my fridge at any given time and you will find nearly all of these ingredients!

Since changing my diet rather drastically, gherkins have become a large part of what I eat. They add tanginess to any salad, are the perfect grab and go snack and transform a sandwhich!

Cheese is another staple in our home. The kids eat it a lot more than I do – it is so versatile, you can do so much with the simple cheddar cheese!

And pecans – we always have pecans!

This recipe is perfect for picnics but could also be packed as a yummy road trip snack! However you eat them, you are just going to want to eat them.

Gherkin Cheese Balls

Rhodes Quality
Servings 9

Ingredients
  

  • 130 g ± 8 whole Rhodes Quality Sweet & Sour Whole Gherkins, chopped
  • 250 g plain cream cheese
  • 80 ml sour cream
  • 250 g grated cheddar cheese
  • 2.5 ml garlic powder
  • 45 ml flat leaf parsley, chopped
  • salt and freshly cracked black pepper
  • 100 g pecan nuts, chopped

Instructions
 

  • Place the cream cheese and sour cream in a large bowl and mix until smooth.
  • Stir in the sour cream, cheddar and garlic powder until evenly mixed.
  • Add the Rhodes Quality Sweet & Sour Whole Gherkins and the parsley and stir to mix.
  • Season to taste.
  • Chill the mixture for 30 minutes.
  • Spoon the mixture onto a sheet of plastic wrap and use the plastic wrap to shape the mixture into a ball.
  • Roll the ball in the chopped nuts.
  • Serve with crackers or fresh baguette.
