We grew up with fritters – pumpkin fritters, sweetcorn fritters. They are such great Sunday evening dinners, quick and easy and you can even add your own ingredients using left overs. The best thing, for me, is that they are pretty easy to make gluten free.
This recipe adds chilli but you can make up a batch without chilli and then split it in two and add chilli to one half for those who like something with chilli.
Do you use Maizena? We use it daily to thicken up sauces as a replacement for flour.
Ingredients
- 1 tin of sweet corn, drained and dried
- 1 cup of Maizena corn flour
- 1/2 tsp salt
- ½ tsp Moir’s baking powder
- 2 spring onions – sliced thinly at diagonal
- ¾ cup ice water
- 1 small red chilli, deseeded and finely chopped
- Coriander for garnish
- Sweet chilli sauce
- oil for frying
Instructions
- 1. In a medium mixing bowl, mix the, Maizena, Moir’s baking powder, spring onion, chilli and salt
- 2. Add half the iced water and mix into a paste and slowly add the rest of the water until a smooth batter is formed.
- 3. Add the corn to the batter
- 4. In a large frying pan, heat the oil to a medium heat.
- 5. Using a spoon, drop a spoon of corn batter and fry for 1 – 2 minutes until golden brown on one side.
- 6. Flip and fry the other side.
- 7. Drain on paper towel
- 8. Serve warm with sprigs of coriander and a sweet chilli sauce

These look so good! I definitely want to try these. I think my little guy would love them and I love that they are gluten-free.
This is amazing. My kids loved it. They’re bugging me to make another batch this weekend. Thank you for sharing the recipe.
We don’t avoid gluten at our house. But this recipe looks so good!
