I don’t love braai meat but I do love all the sides that go with it – I mean is a braai even a braai if you don’t have mielies? These mielies are delicious additions to your braai, especially if you have some vegetarian guests coming to visit.
What is miso?
Miso is a fermented paste that adds a salty meaty flavor to your dishes, it is commonly used in Japanese foods but is gaining in popularity. Miso has been used in Japan since at least the eighth century. Miso can be made from soya beans, rice, salt and koji and comes in a paste form, similar in feel to peanut butter, it is fermented anywhere from a week to a few years. You get up 1000 different types of miso, each one tasting slightly different with some being very salty and others have a distinct sweet flavour.
Miso is ready to eat but is best used in stocks, soups, stews, marinades and gravy. It adds a delicious salty flavour to these mielies, taking them to the next level.


Grilled mielies with Miso-Butter
ProVegIngredients
- 4 mielies
- 2 tbsp vegan butter room temperature
- 2 tbsp miso paste
- 1 tbsp nutritional yeast flakes
- 1.5 tsp BBQ seasoning optional
- 1 tbsp coriander or parsley finely chopped
- Salt flakes to taste
Instructions
- In a small bowl, mix together the butter, miso paste, and nutritional yeast flakes.
- Put the mielie on the braai and lightly brush with the miso-butter.
- Grill for a few minutes on all sides, until tender and slightly charred, but still juicy. Brush generously with the rest of the miso butter, add the BBQ seasoning, and sprinkle with herbs and a bit of salt.
- Serve immediately and enjoy.
