This is another Weigh-Less recipe but it really doesn’t taste like its a “diet” recipe and is very moreish. Cameron really enjoyed.
It is not something you can really make and keep though, it is more suite to a dinner dessert. It is quick and simple so if you are having people over it won’t take ages to make and is pretty flop proof.
Pineapple Meringue Pie Cups

Ingredients
- ¾ cup sugar (or Weigh-Less Spoon for Spoon Sugar Replacement)
- 2tbsp butter
- 2 eggs
- ⅓cup cornflour
- 11/2tsp vanilla essence
- 155ml water
- 225g pineapples (Weigh-Less does have canned crushed pineapples)
- ¼tsp cream of tartar
- 6tbsp sugar
- ⅛tsp salt
Instructions
- Cream together the sugar, butter and egg yolks in a large saucepan.
- Add cornflour, half of the vanilla, water and pineapples. Mix well and cook over a medium heat until the mixture thickens.
- Pour into 8 individual ramekins or one large pie dish.
- Whip the two egg whites until the foam, add the remaining ingredients and whip until eggs form smooth and glossy peaks.
- Spoon over the cooled pineapples and bake in a 200C oven for a few minutes or until the merignue begins to brown.
