You will be all glad to know that last night was relatively calm. I think I got up for Jack twice and both were quick. The big kids both slept in our room since David is away so at least I managed to contain any drama from them 🙂
My mom used to make these gluten free coconut macarooms often and if you leave the chocolate out they are also lactose free 🙂
3 egg whites
1 1/4 cups caster sugar
1/2 tsp coconut essence
1 tsp grated lemon rind (optional)
2 TBSP cornflour, sifted
3 cups dessicated coconut
125g dark chocolate, melted
1. Beat egg whites until firm peaks form. Add sugar gradually, beating constantly until mixture is thick and glossy and all the sugar has dissolved. Add the essence and rind, beat until just combined.
2. Add coconut and cornflour, stir until just combined.
3. Drop spoonfuls onto a baking tray about 3cm apart. Bake at 180C for 15-20 minutes on the top shelf or until golden brown.
4. Once cool, dip into chocolate.
