I hate making dinner. It is an irrational emotion and I have no valid reason for feeling this way. I used to think it was because I was always in a rush after work. I haven’t been working in a 9-5 job for over 6 years and I still hate making dinner! Unfortunately, my children still need to eat every single night. So, over the years I have developed some go to meals. They are quick and easy meals that I know won’t flop even when I am not in the mood.
I will admit that having the Jet Chef has made life (and dinner) so much easier because I can cook an entire meal in it on one tray. No really, I can.
Fish fingers and chips. Kiara has sort of revolted against this meal but if I make her enough chips she will eat the fish fingers. The only problem with this meal, for us, is that I have to cook all 32 fish fingers to make sure everyone is full. I try to make it a little healthier and add some corn, broccoli or carrots because those are the veggies my kids will eat.
Sausages and mash (or chips). The Jet Chef has a setting for Bratwurst which I use for sausages. It takes 10 minutes and it cooks the sausages perfectly. If I am really pushed for time I make chips with them in the microwave.
Spaghetti bolognaise. This one is always a win with everyone. I could make it every night and I don’t think anyone would complain. It is super quick and easy to make. It is a nice meal to make in advance, you can make a big batch of mince and freeze it and then just make the pasta on the day. I use my secret veggie sauce for this one, it’s a nice way to sneak veggies in.
Burgers. This is our Friday night meal. Woolies has their burger patties on special every Friday. I manage most Fridays to convince the big two they want to make dinner, one makes the chips and one makes the burgers. So, this is the easiest of meals for me J
Chicken strips and spicy rice. Spicy rice is always a win, you can add pretty much whatever you want to depending your family tastes. I am currently loving the NomuChirps Moroccan rub. If you coat the chicken strips in some egg and maizena/flour they are amazing!
What are some of your quick and easy meals?

Fab ideas!! My quick meals are:
– Minute steaks with rice and veg (Woolies does a savoury rice which is very quick).
– Boerewors rolls and salad
– Chicken schnitzel with rice and veg
– Pizza bases with our own toppings
So helpful! Mine are:
Sweet potato soup (seriously, just boil sweet potatoes, onions, garlic and some chicken stock, whizz it up and top with cream or plain yoghurt)
Stirfry – what leftovers?
Omelettes
Thanks for the cool ideas.
I’m the same, spaghetti or fries are my go to meals especially if husband works away, then it’s that almost every night for me and Princess. Lazy I know.
