Beat the butter and sugar until light and fluffy. Add the eggs and mix.
Add all the dry ingredients together, including the gin and mix into the egg and sugar mix.
Melt the butter and sugar in a heavy saucepan until the sugar is dissolved. Once it has dissolved, add in the gin.
Pour the caramel into a cake tin (see nots for tin size). Spread the apple slices out in the caramel sauce. Cover with the cake mix.
Bake for 50 minutes in a 180°C degree oven.
This recipe makes a large cake, so if you have 26cm baking tin that could work otherwise you can use 2 x 20cm round cake tins. This is what I did and it worked perfectly. So it depends if you want a thick cake or thinner one.
