Smith's Gin and Apple Cake

Apple Cake

  • 225 g Margarine or butter
  • 275 g Brown Sugar
  • 4 Eggs
  • 250 g Flour
  • 2 tsp Cinnamon
  • 1 tsp Nutmeg
  • 2 tbsp Smiths Spiced Gin
  • 3-4 Green Apples, peeled and sliced

Caramel Sauce

  • 100 g Butter
  • 130 g Brown Sugar
  • 2 tbsp Smiths Gin


  • Beat the butter and sugar until light and fluffy. Add the eggs and mix.
  • Add all the dry ingredients together, including the gin and mix into the egg and sugar mix.
  • Melt the butter and sugar in a heavy saucepan until the sugar is dissolved. Once it has dissolved, add in the gin.
  • Pour the caramel into a cake tin (see nots for tin size). Spread the apple slices out in the caramel sauce. Cover with the cake mix.
  • Bake for 50 minutes in a 180°C degree oven.


This recipe makes a large cake, so if you have 26cm baking tin that could work otherwise you can use 2 x 20cm round cake tins. This is what I did and it worked perfectly. So it depends if you want a thick cake or thinner one.
